Kadumanga Achar – Tender Mango Pickle

One of the simplest preparations of Pickle that is very tasty using the delicate Tender Mango as the main Ingredients.
Kadumanga Achar – Tender Mango Pickle

Ingredients:
- 1 tender mango, cut into small, cubed pieces
- 1 Tbsp Red Chili powder
- 1 tsp mustard seeds
- A pinch of Asafoetida
- 1 tsp fenugreek seeds, powdered
- 1 Tbsp Sesame oil
- 2 green chillies, round thin slices
- 2 cloves of garlic
- curry leaves and salt to taste
Method:
- Sprinkle salt over the diced mango and leave for 4-5 hours.
- Heat oil in a pan, splutter the mustard seeds. Add the garlic, green chili and fenugreek powder and saute briefly.
- Remove pan from heat and add the Chili Powder, Asafoetida and mango pieces. Stir well.
- Leave for 1 hour and the Kadumanga Achar – Tender Mango Pickle is ready to serve.
