What does Lababdar mean? The word Lababdar has a Mughal origin. And those dishes termed Lbabdar, no doubt have some Mughal influence. Although there is no exact translation to the word, it is used to describe delectable, rich dishes that are extremely desirable, and those that you and your tastebuds, will ‘surrender’ to.
Paneer Lababdar is one of the dishes that tops this list. It is a delightful North Indian Restaurant favourite, made with luscious paneer cubes as well as grated paneer. It is a tomato, onion and cashew-based gravy and the whole thing just makes your mouth water. The use of melon seeds is a must for authentic Paneer Lababdar and the grated Paneer in it is not only its signature style but makes the gravy even more satiating and irresistible. Best served with Indian flatbreads like Garlic Butter Naan, Plain Naans or Laccha Paratha.

How to make Paneer Lababdar- Recipe at a glance:
- Saute ingredients for the special paste, and allow to cool before, grinding to a smoothe velvety paste.
- Cut the paneer block into triangular chunks and also grate some.
- Saute spices and ginger and garlic in butter and oil and cook the prepared paste in this.
- Add water , cream and adjust consistency.
- Cook the paneer and some of the grated paneer in this. Garnish with remaining grated
Ingredients:
- 500 gms Paneer Block
- 2 tsp Sunflower Oil
- 1/4 tsp Cumin seeds
- 1 petal Star anise
- 3 Green Cardamom
- 3 Cloves
- 2 Onions, sliced
- 4 Tomatoes, chopped
- 1 Tbsp melon seeds/Char magaz
- A handful of raw Cashewnuts
- 1 1/2 Tbsp butter plus some oil to make 1/4 cup
- 2 tsp Kashmiri red chilli powder plus 1/2 tsp
- 2 1/2 tsp Ginger-Garlic paste
- 1-2 tsp North Indian Garam masala
- 1 tsp Coriander powder
- Just a little less than 1/2 tsp Turmeric powder
- Boiled water as needed
- Salt to taste (1/2 tsp)
- 1/2 tsp sugar
- 1/4 cup cooking / pouring cream
- 2 tsp Kasuri Methi / dried fenugreek leaves
- Large handful of fresh coriander leaves
