Spice Culture: A bit about Spice Mixes in general
This Homemade Mutton Masala Spice Powder adds flavor and the aromas of Indian Mutton preparations, not only to your mutton and meat dishes but also works really well for Vegetarian dishes. I love to use it in recipes like my Green Peas Masala and Mushroom Masala Gravy. To regular Mutton dishes, just add a tsp or so in place of Garam Masala, along with your usual blend of Coriander, Chilli Pepper, or Fennel powder.
I have shared another spice mix ‘ Homemade Meat Masala Powder’ earlier here on RAS, which is quite popular. It is used for meat, chicken, and egg dishes. The ‘body’ is made more robust and distinctive, with additional impactful spices like mustard seeds, fenugreek, star anise, and nutmeg.
This recipe for Mutton Masala Spice Powder is more fragile and blends well to suit dishes, where you don’t want spices to stand out as much or overpower the dish. In any case, both are useful 🙂 I have always found that a good ‘ put-together’ spice blend will always add that magical touch and take you far in your culinary repertoire. Remember to always compliment the spice mixes with base spices like coriander and chili. Every type of curry or dish has its own suited spice according to the flavor profile.
How to design a Curry Powder?
Every curry powder/spice mix has a distinct base and body as well as ‘definers and enhancers‘ . The base usually consists of Coriander and Chilli powder which makes up almost 40% of the powder. The body consists of spices like cumin, fennel, and turmeric, these determine not only a distinctive change in spice aromatics but also define the color. None of these must be used in high ratios. The definers are spices like Nutmeg and Mace and enhancers are spices like star anise, and fenugreek. These are all used in small proportions.

What Is Garam Masala?
Garam masala is a spice blend widely used in Indian cuisine widely used in Biryanis, Curries, Lentils etc.. It can vary from region to region and furthermore from home to home. As the name suggests, ‘Garam’ – meaning HOT – refers to the sense of warmth that the spices create, and not the spice level. In fact, Garam Masala is not usually ‘Spicy’. Garam masala may or may not contain ‘base & body’ spices like coriander seeds, but do not contain chili powder or turmeric.

Spices can exhibit the essence of the five basic flavors. Bitter, Salty, Sour, Sweet, and Umami. Supporting flavors include Earthy, Floral, Fruity, Herbaceous, Woody, Cooling, Hot, Spicy, Nutty, and Pungent.

How to make Homemade Mutton Masala Spice Powder – Recipe at a glance:
- Toast whole spices along with fresh garlic and curry leaves.
- Cool off, then spice powders and salt.
- Grind to fine spice powder.
- Cool off completely and store airtight.
