Ingredients:
- 3 cups fresh cauliflower, broken into small florets
- 1 – 1 1/2 cups Carrots, peeled and sliced
- 3/4-1 cup celery stalk, sliced
- 1 cup assorted mini Peppers (Yellow, Red, Orange), sliced
- 2 fresh long mild chillies(Red and Green), sliced
- 1 cup Borettane Onions (Italian pearl onions) if available
- 1 3/4 Tbsp Salt
- 2 large cloves of garlic, per jar
- 1 Tbsp Olive oil per jar
Pickling Spices:
- 1/8-1/4 tsp dried or fresh Oregano
- 1/8 tsp Coriander seeds
- Pinch of Yellow Mustard seeds
- Pinch of black Peppercorns
- Pinch of Chili pepper flakes
- 1 Bay leaf
Pickling Solution:
- 2 cups of Vinegar
- 2 cups of Water
- 1 Tbsp Salt
- 1/2 Tbsp Sugar (optional)
You will need two 800 ml capacity jars(approx) with a tight-fitting lid for pickling. Rinsed with hot water and dried beforehand.
