Frozen Coconut Praline Soufflé

A baked Soufflé is often one of the most intimidating of desserts. It collapses as soon as you take it out of the oven so must be baked when you are ready to serve it! With the ultra-silky texture of the Frozen Soufflé, you can actually make it a day ahead of time. My Frozen Coconut Praline Soufflé is out of this world! In actual fact, it is just an illusion! The dessert is frozen in the ramekins, using a high collar made of parchment paper, giving it that look of a raised Soufflé when you unwrap it!

The bits of praline throughout the creamy coconut dessert make it really yummy indeed.  And since it’s frozen you can serve it at summer parties and places like Singapore where we are experiencing a rather hot Christmas season, this dessert is my experiment for this festive season!

How to make Frozen Coconut Praline Soufflé  – Recipe at a glance:

  • Chill the creams till stiff. Bring eggs to room temperature.
  • Prepare the Praline.
  • Beat egg whites and sugar.
  • Fold in whipped creams and Vanilla.
  • Freeze in specially prepared ramekins, to get the ‘illusion’ of a Souffle, when unwrapped!

Ingredients:

1/2 cup sugar
3 egg whites at room temperature for 30 minutes
1 cup/ 240 mls Coconut Cream – left overnight in the fridge till stiff
3/4 cup /200 mls Chilled Whipping Cream

For the Praline:

  • 1/2 cup sugar
  • 1/4 cup flaked almonds

You will need:

2 larger (7-oz) ramekins or 4  smaller (4-oz) ramekins

Make sure that your coconut cream is chilled overnight, that the whipped cream is also chilled and that the eggs are at room temperature before you begin.
