Fish fi Har | Arabic flame-grilled Fish is an easy preparation of stove-top BBQ fish. ‘fi Har’ is Arabic for ‘IN HOT ‘ referring to the heat from flames. Here the Arabic Kabsa Spice mix is used to marinate fish. The aromas that come from the finished dish are just so amazing!
A simple-safe stovetop Bbq pan is used to create a little fire and smoke that is responsible for giving the fish that smoky-distinctive-seductive scent that is the essence of barbecue. Bbq aroma that makes us drool even before we are at the table. It is a fact that aroma hitting the palette is just as important as taste.
And here, we don’t have to use a charcoal bbq. Quite convenient, in these days of self-isolation, when we don’t hit the Bbq pits, as much. Even in normal times, this is a method, that I discovered and will be using quite a lot.. for this simple reason. Everyone is magnetically drawn into the aromas that come from this delicious grilled fish!

How to make Fish fi Har | Arabic Flame-Grilled Fish- Recipe at a glance:
- Marinate fish with the special, simple blend.
- Pan fry till golden, adding bell pepper.
- Transfer to special. grill pan on the stovetop, to smoke and flame the fish briefly before serving the hot.
- This fish can be made with any fish suitable for grilling. I have made it with Salmon and Grey Mullet with delicious results.
Ingredients:
- 550 gms fish steaks suitable for grilling. I recommend Salmon or Grey Mullet for this recipe
- 1 1/4 Tbsp ginger-garlic paste
- 2 tsp Kabsa Spice Mix
- 1/2- 3/4 tsp Mild chilli powder
- 1/4 tsp Turmeric powder
- Half a chicken bouillon cube or stock cube
- Dash of Salt
- Sunflower or neutral flavoured oil for pan-frying
- 2 handfuls of diced green bell pepper/capsicum
- Lemon or Lime wedges for serving
A bbq type of grill pan is required to flame grill the fish. You can also mimic this pan as mentioned in notes.
Notes:
- Kabsa Spice mix is essential in this recipe.
- The fish I recommend for this recipe: Salmon and Grey-mullet. Both contain high omega-3 polyunsaturated fatty acids content.
- If using Grey mullet, remove the thick white fat that is often seen in the belly section when you cut the slices. Also scrape away the black inner layer, shown in video.
- A bbq grilling pan is used for this recipe. This can be purchased at any bbq supplies store and is quite cheap.
- A bouillon cube or stock cube or broth cube is dehydrated broth or stock formed into a small rectangular cube. Typically made from dehydrated vegetables, meat stock, a small portion of fat, MSG, salt, and seasonings, shaped into a small cube. MSG-free and Vegetarian and vegan types are also made.
- Ginger- Garlic paste is freshly crushed/ ground paste made from equal amounts of fresh ginger and garlic. See how to make Ginger-Garlic paste to store in the fridge.
- To mimic the grill pan used in the video, I have had success using a thick disposable aluminum pan like the one below with thin slits cut into it. Then a wire mesh was placed on top and the fish was placed on it. However, the disposable pan must be the thicker type, as the thin ones will melt away over flame. A better solution is to make holes in an old aluminum saucepan or cake pan. Then place the wire mesh over it and use just as seen in video.
