Ethapazham Roast – Ripe Plantain Fried in Ghee
The plantain is cooked in a variety of different ways in Kerala. This would be one of the easiest sweet snacks made of Ripe Plantains. Make sure your Plantain is quite ripe or the fried snack will be less tender.
Ethapazham Roast – Ripe Plantain Fried in Ghee
Ingredients:
- 4 Nicely ripened plantains
- ¼ or more cups ghee for pan frying
- sugar for dusting
Method:
- Peel the plantains. Slice thinly either slanted pieces or cut the plantain in half and slice into thin strips.
- Heat 2 Tbsp of ghee at a time in a non stick frying pan.
- Add the slices in one layer, so that they are not too crowded. Fry on a medium heat till the bottom is dark gold in color.
- Turn over and fry the other side.
- Add ghee before frying the next batch, since the ghee will be absorbed in the frying process.
- Move the fried pieces to kitchen paper and spinkle with sugar. Serve warm with small sized forks for eating.

You can also use coconut oil for frying if you like it.
