Egg and Potato Curry – Aloo Anday ka Salan

Salan (  سالن  ) is a term for curry in Urdu. Oh, and ‘Curry’ is a preparation of any meat or vegetable dish in a spiced sauce. This Egg and potato curry or Aloo Anday ka Salan is more of a Pakistani style curry. It is extremely simple to make and goes well with pulao or paratha.

How to make Egg and Potato Curry – Aloo Anday ka Salan – Recipe at a glance:

  • Boil Potato and Egg.
  • Pan-fry the boiled eggs
  • Chop Onion. Puree the fresh Tomatoes.
  • Saute onion with Ginger-garlic and cook the tomato puree.
  • Add spices and add the cooked egg and potato.
  • Cover and simmer for a while. Season and Garnish.

  • 8 eggs, boiled
  • 2 large potatoes, peeled and chopped
  • 1 large red onion, chopped very finely
  • 2 large tomatoes, blended fresh to a puree
  • 1 Tbsp Ginger -garlic paste
  • 8 small green chillies left whole
  • 4 Tbsp chopped fresh Coriander
  • 4 Tbsp Oil, divided
  • 1 1/2 Tbsp Coriander powder
  • 2 tsp Red chilli powder, divided
  • 1/2 tsp Turmeric powder
  • 1/2- 3/4 tsp Garam Masala powder
  • 1 tsp salt(to taste)
