Easy Unniyappam with Rice Flour

Unniyappam is a traditional sweet snack of Kerala, made with Rice flour, Banana, Jaggery, mild spice, and Coconut bits. It is fried in a special pan called Appakara/Unniyappa Chatty which is similar to the Dutch Aebleskiver Pan. Unlike the Dutch Aebleskiver (Æbleskiver), which is a leavened, fried pancake, the Uniyappam is denser in texture and can be stored for a few days without affecting the texture or flavor.

Unniyappam is a variation to another traditional Kerala sweet snack called Nayappam, where the batter is just poured ladle by ladle into hot ghee. Unniappam is often used as a ritual offering, in the temples in Kerala (dedicated to Lord Krishna).

How to make Easy Unniyappam with Rice Flour Recipe at a glance:

  • Prepare Jaggery syrup.
  • Mash Banana and Prepare batter.
  • Set aside for 4 hours.
  • Fry in  Dutch Aebleskiver Pans.

Ingredients:

  •  250 gms Jaggery
  • 250 gms raw Rice flour ( plain or idiyappam podi)
  • 2 small ripe table bananas (palayamkodan) /150 gms
  • 1/2 cup coconut bits
  • Spices – according to taste I have used 3/4 tsp ground ginger, 3/4 tsp cumin powder, and 1 tsp green cardamom powder. Everyone has their own likes and dislikes when adding spices to Uniyappam. see notes.
  •  1/2 tsp salt
  • Coconut oil for frying
  • Ghee optional for frying coconut.
