Easy Malabar Chicken Curry

Malabar Chicken Curry is a vibrant and flavourful Curry dish that hails from the Malabar region of Kerala. Known for its aromatic spices, this curry offers a unique taste profile. Oftentimes, Malabar Chicken curry is prepared with Coconut Milk, making it creamier and richer(try this one).

However, today our Easy Malabar Chicken curry does not require any coconut milk. It is a simple blend of Powdered and whole spices, with usual fresh ingredients like onion, garlic, ginger, curry leaves, tomato, and coriander leaves,  giving it it complex and fragrant flavor profile. This Malabar Chicken Curry is typically medium-thick in consistency, allowing the flavors to coat the chicken and rice. The level of heat can vary depending on the amount of chili powder used, but it’s generally considered a moderate spice level. Malabar chicken curry is usually made in coconut oil, but those who do not like coconut oil, can use any neutral-flavored oils and it works fine!

How to make Easy Malabar Chicken Curry – Recipe at a glance:

  • Prepare an easy spice powder paste.
  • Prepare and easy blended fresh paste.
  • Marinate the chicken for 30 minutes.
  •  Fry whole spices followed by chicken for some time then add water and the spice powder paste. Cook covered till thickened.
  • Add in remaining ingredients and pressure cook till tender.
  • Add final seasonings and simmer.

Ingredients:

  • 1 kg Chicken, cut into medium-sized pieces
  • 2 large Potatoes, peeled and cut into large chunks
  • 2 large Tomatoes, sliced
  • 1 1/2 Tbsp Tomato puree
  • 2 Sprigs fresh Curry leaves
  • 1/4 tsp Kerala Garam Masala
  • Small handful of fresh coriander leaves, chopped
  • Salt to taste(1 1/2 tsp)
  • 4 Tbsp Coconut oil

For the freshly Ground Paste:

  • Half(of one) Red Onion
  • 8 large cloves Garlic
  • 3 cm piece of Ginger
  • 2-3  Tbsp Mild Red Chilli
  • 2-3 Tbsp Mild Green Chilli
  • 2 small sprigs fresh Coriander leaves

For the Spice Powder paste:

  • 3 1/4 Tbsp Coriander powder
  • 2 1/4 Tbsp Kashmiri Chilli powder
  • 1 Tbsp Fennel seed powder
  • 1 tsp Turmeric powder
  • 1/4 Black Pepper powder
  • 1/8 tsp ground Cloves
  • 1/8 tsp ground Cinnamon
  • 1/8 tsp ground Green Cardamom
  • 1/8 tsp ground Cumin

Whole spices for the Curry:

  • 2 small broken sticks of Cinnamon
  • 3 Cloves
  • 3 green Cardamom pods
  • 2 segments of Star Anise
