Easy Kerala Chicken Fry – A Family Favorite.

Traditional Kerala cuisine is not to be missed. The coconut available in Kerala is the tastiest in the world and it is used generously. Bursting with flavors and rife with textures, the classic recipes from this southern state on the western coast of India have a huge fan following.

There are many roadside food stalls in Kerala, knows as. ‘ _Thattu Kada_ ‘ and the food is so good that you will often travel to the same _Thattu kada_ just for the food, even if it _way out of your traveling route_. Kerala Beef Fry and Chicken Fry are hot sellers.

This Kerala chicken fry is a favorite at my house and we have been making it ever since I can remember. With practice, you get the timing just right, without overdrying the chicken and it is just so good for something so easy. It goes well with any meal. Or simply on its own! I often pack this on family picnics and it disappears very quickly!

This Easy Kerala Chicken Fry can be marinated overnight and up to 24 hours ahead of time( refrigerated), if you need to plan for entertaining. Just leave it out at room temperature for 30 minutes before frying. It’s a great ‘make ahead of time’ recipe, that I rely on for parties.

This is one of the easiest recipes for Kerala Chicken Fry, but it never fails to impress. Just prepare the smooth marinade and cover the chicken pieces with it. Shallow-fry till tender in coconut oil. It doesn’t get much easier, now does it?
