Easy Baked Tandoori Salmon Meal
This Easy Baked Tandoori Salmon Meal finds its way onto my recipe roster just about every week! To facilitate meal planning, it’s immensely helpful to have a roster of recipes. You can always experiment with elaborate recipes and try something new when the mood sets in, but having a good number of easy standby recipes makes planning( and life in general) easier.
I never shared this recipe, frankly because it’s just so simple, and many of you will make similar baked salmon at home, for sure. However, I was motivated by a friend who had this at my home and has since been pestering me incessantly( with a lot of love), to please add such simple and tasty recipes on my blog for the lazy home cooks, who like to have the mind-work taken out of the daily cooking equation.
So here you are, try this easy-baked salmon meal, which I regularly make on Tuesdays, when I spend the day doing the weekly house cleaning. I am sure there are many homemakers like myself, who can do elaborate cleaning and elaborate cooking but not all on the same day!

A 300 gm fillet of salmon (center cut), is enough for 2 people when served as a meal containing other vegetables and carbs. You can double the recipe according to how many people you are cooking for very easily with this recipe.
How to make Tandoori Salmon Meal- Recipe at a glance:
- Chop some shallots, garlic, and coriander leaves.
- Rub some simple spice and salt over the fillet and press the chopped ingredients over the top.
- Toss potatoes with spice and salt and lay around the salmon in a baking dish.
- Bake to desired doneness.
- Meanwhile, boil corn and prepare a quick easy chopped salad, to serve alongside.

Ingredients:
- 300 gm Salmon Fillet ( centre cut)
- 1 tsp mild Chilli powder
- 1/4 – 1/2 tsp store-bought Tandoori Spice Mix
- Juice of Half lemon ( to be divided between salmon, potatoes, and salad)
- Salt to taste
- 2-3 Shallots, chopped
- 2 large cloves Garlic, chopped
- 2 Tbsp fresh Coriander leaves chopped
- 1-2 Tbsp Olive oil (plus a dash for the salad)
Salad/Side:
- 2 ears corn on the cob, husks and silk removed
- 2 cups mixed baby salad leaves
- 1 cucumber, peeled and chopped
- 1 carrot, peeled and chopped
- Handful of Cherry Tomatoes, halved
- Handful of Black pitted olives, halved
- 2 Shallots, chopped (makes 1 Tbsp)
- 1 tsp Maple Syrup
- 1/2 tsp Chilli flakes
