Delicious Chicken Pulao Recipe

This is a delicious rice dish, enhanced with home made chicken stock. So light and aromatic and perfectly puffed up, glossy-buttery rice! Great with a yoghurt based salad or our Date and Tamarind Curry
Delicious Chicken Pulao Recipe

Ingredients:
- 3 chicken breasts, boneless
- 2 tsp garlic paste
- 1 tsp black pepper powder
- ½ cup french beans, sliced into small pieces
- ½ cup Carrot, diced
- Green Peas- Fresh or Frozen
- ¼ tsp turmeric powder
- 3 cups Basmati Rice
- 4 Tbsp Ghee, butter or Oil
- Salt to taste
- Whole Spices – Cloves, Cardamom, Cinnamon – 3 pieces each.
Method:
- Cut the cleaned chicken into bite size pieces. Marinate the Chicken pieces with pepper, 1 tsp salt and garlic paste for 15 minutes.
- Wash the rice and soak for 10 minutes. Drain.
- Heat some oil in a pan, Lightly stir fry the marinated chicken pieces till cooked through. Do not overcook and dry out your chicken. Set aside.
- Heat ghee or butter in a deep pot or cooker. Add the whole spices, chopped onion and saute till soft and transclucent.
- Add the chopped vegetables and cook till glossy. Add the turmeric powder. Toss.
- Add the drained rice and stir- fry with the vegetables till coated.
- Return the cooked chicken to the pot.
- Add 6 cups water.
- Bring the water to boil, adding sufficient salt ( around 2 tsp)
- Close the pot with a tight fiting lid and cook on a low flame till the water evaporates completely.
- Fluff up the rice with a fork. Serve hot!

Notes:
- If using a pressure cooker, close the cooker upon boiling and apply the weight.
- cook on high till the first steam whistle. Turn down heat to low and cook for 3 minutes.
- Remove from heat. Allow to cool and Open. Continue to fluff up the rice.
