CRAZY Butter Chicken MASALA!
This Butter Chicken Masala is Insanely delicious! Three different techniques for Murgh makhani and Tikka Masalas are combined to make this one-of-a-kind finger-licking good CRAZY Butter Chicken Masala.
The Marination process is different, the preparation of masala is different and this recipe also requires a special tempering(Tadka) which is absent in regular butter chicken or tikka masala.
All together, it makes for a ‘to-die-for version of Butter Chicken, that you have gotta try out once!

How to make CRAZY Butter Chicken MASALA! Recipe at a glance:
- Soak Cashewnuts and Hang yoghurt before cleaning the chicken.
- Marinate Chicken in a two-step process.
- Use a rotisserie to broil or cook the chicken. If you can you can cook them on the bbq too. And if both of these are not an option you could even pan fry the chicken instead.
- Smoke the chicken.
- Prepare Masala in steps.
- Garnish and temper.

Ingredients:
- 1 kg Chicken (bone-in, skinless) cut into medium size pieces
- 1/2 cup cashew nuts
- 1/2 cup thick set Yoghurt
- 4 Tbsp Kashmiri chilli powder (divided)
- 10 generous tsp Ginger Garlic Paste (divided)
- 1 tsp Salt and as needed
- 4 Red Onions (2 large and 2 medium-sized)
- 3 Tomatoes (1 large and 2 medium-sized)
- 1/2 cup melted butter, for basting
- 1/4 cup oil plus 6 Tbsp, divided
- 1 Bay leaf
- 2 Tbsp Butter, softened
- 3 Tbsp fresh pouring cream.
- 3-4 Tbsp freshly chopped coriander leaves
Whole Spice Mixture for Masala:
- 1 Star Anise
- 4 Cloves
- 1 Mace
- 6 Black Peppercorns
- 3 Green Cardamom pods
- 2 medium sticks of Cinnamon
Powdered Spice Mixture for Masala:
- 1 tsp Coriander powder
- 1 tsp Kashmiri Chilli powder
- 3/4 tsp Cumin powder
- 3/4 tsp Turmeric powder
- 2 tsp Tandoori Masala (store-bought or see notes)
- 2 tsp Sabzi Masala (store-bought or see notes)
- 1 tsp North Indian style Garam Masala (store-bought or see notes)
For Tempering:
- 1 Tbsp Butter
- 1 Tbsp Oil
- 1/4 tsp black mustard seeds
- 1/4 tsp Cumin seeds
- 2 mild Dried red chillies, broken
- A handful of fresh curry leaves
- 2-3 tsp finely chopped Garlic
