Coconut Milk Panna Cotta with Jelly

Panna cotta is an Italian dessert made by simmering together cream, milk, and sugar, mixing this with gelatin, and letting it cool until set.
It is typically served with wild berries, caramel, chocolate sauce, or fruit puree. A simple to prepare, rich and delicious – milky gelatin pudding/dessert, flavored with vanilla and topped with fruit, jelly, or spices, and served chilled.
This version incorporates the lovely aroma of coconut milk and is topped with a layer of Strawberry Jelly.
Pana Cotta is best served the next day after chilling well.

This recipe takes a mere 10 minutes for the actual process. The rest of the time is for setting and chilling of the jelly and Panna Cotta!

How to make coconut milk Panna Cotta with Jelly Recipe at a glance:

  • Prepare Strawberry Jelly.
  • Bloom the Gelatin. (Info on the recipe page)
  • Heat together cream, coconut milk, and sugar till dissolved. Add the gelatin mixture and vanilla and allow to cool.
  • Pour the cream mixture over the set jelly and chill several hours till set.

 

PANACOTTA INGREDIENTS

In the picture, I poured in the Panna Cotta layer over the jelly layer before the jelly was 100 % set.  This caused the red color to ‘bleed’ into the Panna Cotta to give it the rose color. But I don’t really mind it this way either. To ensure the Panna Cotta layer is pure white like on the recipe page – make sure the Jelly has set perfectly before you pour over the Panna Cotta layer and make sure the cream mixture for the Panna Cotta has cooled off properly before pouring.

Ingredients for Coconut Milk Panna Cotta with Jelly :

  • 1 Packet Jello/Jelly – Any flavor. I love to use strawberry-banana Flavor.  (To make you own fruit jelly see recipe below)
  • 1 cup fresh coconut milk (or mix 1/2 cup coconut cream with 1/2 cup water)
  • 1 cup fresh cream (cooking or whipping cream may be used)
  • ¼ cup sugar
  •  2 ¼ tsp powdered gelatine.(good quality)
  • ¹ ½ tsp vanilla extract
