Coconut Egg Bhurji / Egg Thoran
This Egg Bhurji, or Indian Style Scrambled eggs incorporated very basic ingredients and features grated coconut to give it that nice texture. It is extremely quick to prepare and makes a good sandwich filling as well.

Coconut Egg Bhurji / Egg Thoran
Ingredients: serves 2
- 3 eggs, beaten with salt to taste
- 1 onion, chopped
- 1 mild long green chili, sliced
- ¹⁄8 tsp turmeric powder
- 1 ¼ tsp mild chili powder
- ½ cup fresh grated coconut
- salt to taste
- 3 Tbsp oil of choice
Method:
- Heat oil in a non stick skillet/pan.
- Add the inion and saute till softened.
- Add green chili. Saute well, stirring constantly till golden, about 3 minutes.
- Add the coconut and stir briefly. Add the turmeric and chili powder. stir- fry till spices are cooked.
- Now add the beaten egg and scramble and stir fervently. Scramble on a low heat till the eggs are finely scrambled.
- You can serve this with Rice, Roti or as a grilled sandwich filling with some tomatoes and baby spinach.

Notes:
You can make the Bhurji fancy by adding tomato, which also makes it moister.
Add capsicum and spices such as coriander or cumin for a different flavor.
