Choora Meen Fry (Fresh Tuna Fry)
Choora Meen Fry or Tuna Fry , Kerala style is very simple to prepare and tasty with plain rice meals. Have you ever tried frying Tuna? The simple marination ingredients are ground together to a paste, applied to the fish, and kept refrigerated for one hour, before frying to perfection in coconut oil!
I like Tuna, to me, it is not as fishy as many other varieties of fish. The flesh is nice and firm, and you get nice beautiful steaks or fillets.
As a seawater fish, tuna comes in many varieties and the meat can be varied in color from light to dark pink or almost red!
Tuna, for its part, is a source of high-quality protein with almost no fat. It contains all essential amino acids required by the body.
At the same time, research shows that tuna contains mercury, which accumulates in larger fish that are higher on the food chain. For most people, the fish doesn’t contain enough mercury to be a concern, but pregnant women, nursing women, babies, and young children. should reduce tuna intake, as mercury may be toxic to a developing child’s nervous system. Since most of us, don’t eat so much tuna, it should not be an issue at all.

How to make Choora Meen Fry (Fresh Tuna Fry)- Recipe at a glance:
- Grind fresh ingredients and spice.Add water to make a paste.
- Apply to cleaned fish pieces.
- Marinate in the fridge for 1 hour.
- Shallow fry in batches in coconut oil
How to choose Tuna:
The best-tasting tuna (bluefin, yellowfin, bigeye, or albacore) will range in color from deep red to pink. Usually best to buy the whole fish and have it cut up. If the steaks are already cut, look for lightly moist, shiny and almost translucent meat. This means the steak is very fresh and recently cut. The longer the steaks have been cut, they will oxidize, turning brown, so if they look dull/matte, or very brown, then they’re probably not fresh. Another sign is “gapping,” when the meat of the muscle starts to separate into flakes already. Fresh fish should also have a fresh sea-air smell, and not an overly fishy odor.
All tuna steaks will have some areas of darker meat running through them. This nutritious meat is perfectly edible but some people don’t like it. You can cut it out, or choose steaks with a minimal amount of it. I don’t really mind it.

Ingredients:
- 1 kg tuna pieces (I got one tuna fish and cut it into nice thick slices about 9 steaks)
- 2 1/4 tsp sea salt rock crystals (kall uppu)
- 1 1/2 tsp black peppercorns
- 1 Tbsp chilli powder
- 1 tsp turmeric powder
- 1 sprig curry leaves
- 2 3/4 Tbsp Ginger Garlic Paste (equal amounts of ginger and garlic ground together)
- 1 Tbsp Vinegar or Lemon juice
- Coconut oil for shallow frying
- Lime , Cucumber and onion for garnish.
