Chinese Style Steamed Egg | Steamed Water Egg is the perfect dish if you need to make something extra along with your rice and side dishes as a part of a yummy Asian meal. Silky smooth in texture, this savoury set egg custard is absolute comfort! The texture is sometimes difficult to achieve, but after making this so very often for my kids after school meal, I have learned some dos and don’ts. Today I am sharing them with you.
Later, I will post my recipe for Chawanmushi, which is the Japanese version of steamed egg. The Japanese version incorporates various fillings including, chicken and prawn. It can be had as an appetizer or a small meal by itself!
Back to the Chinese version though… sometimes simple is best. I mean it accompanies rice so well, and you don’t need any extra sauces or gravy to moisten your rice so splendidly! Chinese Style Steamed Egg | Steamed Water Egg
In my version, I use white pepper powder, garlic powder and onion powder, to season the egg. I also use a little cornflour which aids in the prefect set – steamed egg. More tips on getting the perfect steamed egg texture on the Recipe page.
If you have never had Chinese steamed egg before, the dish is something that is usually served along with white rice, like Thai / Jasmine and other Asian side dishes like chicken/ beef/ fish stir-fry and vegetables. The moisture in the steamed egg makes it perfect that you can even have it with rice and crispy fried chicken or something dry like that. The egg compensates for the lack of any sauce or gravy along with the rice. The taste is actually not so eggy, since the water is used to dilute the egg mixture. But the ‘texture’ is just beautiful and seasoned like this, lightly it is just very tasty!

The method in BRIEF: Beat the eggs lightly. Add the water at the specified temperature, and continue beating. Add seasonings. Strain into steaming bowl. Cover with cling wrap. Steam over simmering water, on medium heat, for unto 20 minutes. Garnish with fried garlic, oil, soy sauce and spring onion greens. Oh yum!
