Chinese Stir Fried Vegetables

Chinese Stir Fried Vegetables
Ingredients: Your can use your choice of vegetables.

- 4 Tbsp oil
- 2 cloves garlic, smashed but intact
- ½ cup spring onions (white part) or White onion, chopped
- ½ cup beans or snow peas, cut into 4 cm/1.5”
- ½ cup carrots, sliced into rounds or half rounds
- ½ cup cabbage shredded into large strips
- ½ cup cauliflower/broccoli/potato( any or all) cut into small piece
- 1 Tbsp chopped up celery leaves
- 2-3 tsp soy sauce
- 1 Tbsp oyster sauce/vegetarian oyster sauce
- 1 tsp cornflour mixed in 3 Tbsp water (no lumps)
- 2 Eggs – lightly beaten with salt and pepper -optional
Method:
- Make sure all the vegies are FRESH, washed, drained and cut into bite size pieces.
- Heat oil in a wide wok, add the garlic till golden and remove.
- Add the spring onions and soften
- Add the potato first, followed by the vegetables one at a time and stir fry till the toughest veg is cooked crisp. Add soy sauce, oyster sauce, salt, pepper and a sprinkling of water if needed.
- Cover and cook for 2 minutes on low.
- Stir well. Once the veggies are cooked, increase heat to high, IF USING EGG : add the egg and scramble like you mean it, till the egg is cooked.
- Add the cornflour solution and toss well till the vegetables are glossy.
- Garnish with the celery and spring onion greens.
Notes:
- You can play around with different vegetables; Celery,Mushrooms,Snow Peas, Baby Corn etc. You can also add large red chillies ,sliced for color and kick.
- You can omit the egg altogether if desired.
- Serve warm.
