Chinese Beef Stir Fry with Vegetables is very commonly made in Chinese homes, with any vegetables that you may have. I particularly love adding sawi spinach / xiao bay chai/ Japanese mustard greens. Other popular options are broccoli, green bell pepper or mushroom. This is a dish that can be made in 20 minutes and it’s just awesome with steamed white rice. Ingredients:
- 200 gms thin beef strips suitable for stir frying
- 200 gms sawi spinach/ xiao bay chai / bok coy or other green vegetable
- 1 yellow onion, sliced
- 2 tsp garlic, chopped finely
- 2 tsp ginger, chopped finely
- 1-2 tsp black bean paste – I use Lee Kum Kee spicy black bean paste
- ¼ cup vegetable / sunflower / bran oil
Marinade:
- 1 Tbsp light soy sauce
- 1 Tbsp vegetable oil
- 2 tsp corn flour / corn starch
- 2 tsp coarsely cracked black pepper
- 2 tsp brown sugar
Sauce:
- 1 Tbsp light soy sauce
- 1 Tbsp oyster sauce
- ¼ tsp dark soy sauce
- 2 Tbsp water
- 1 ½ tsp sesame oil
- 2 tsp tapioca flour ( for thickening the sauce – may use cornflour if not available)
Method:
- Add the beef strips and all other ingredients under ‘Marinade’ to a bowl. Mix well, to glaze and marinate the beef. Set aside, while you prepare other ingredients.
- Mix all the ingredients listed under ‘Sauce’ in a bowl and set aside.
- Chop off the bottom of the spinach stalk and separate the leaves. Rinse well. Chop up the whitish, stalk portion and leave the leaves long.
- Heat oil in a Chinese wok. Add the marinated beef and stir fry on high for 2 minutes, with constant stirring.
- When the beef is slightly browned from the frying, add the sliced onion and continue to stir fry till the onion is soft about 2 minutes.
- Next, add the chopped ginger and garlic and cook till the raw smell of the garlic, dissipates.
- Add the spinach and cook briefly till the leaves wilt and stalk softens.
- Also add the black bean paste and stir till aromatic.
- Stir the contents of the ‘Sauce’ bowl once and add to the hot wok.
- Stir till thickened. Remove from heat.
- Serve with steamed white rice.
Chinese Beef Stir Fry with Vegetables
- This recipe is quite versatile, If you do not have, black bean paste and oyster sauce, simply adjust the light and dark soy sauce to taste and add salt if needed.
