Chilli Pepper Chicken Perelen – Marinated chicken in Semi-dry Masala

Chilli Pepper Chicken Perelen is a semi-dry chicken masala preparation, when marinated, pan-fried chicken is tossed in a mouth-watering masala consisting of onion, tomato and spices.  This is a popular method of preparation in Kerala and goes well with rice or flatbreads. I love it Parotta, Pathiri or Ghee rice. A flavoursome chicken masala with warm and earthy spice.

How to make Chilli Pepper Chicken Perelen – Marinated chicken in Semi-dry Masala – Recipe at a glance:

  • Marinate the chicken pieces. with simple spices.
  • Prep fresh ingredients for the masala.
  • Partially fry the marinated chicken.
  • Saute onions and remaining fresh ingredients, in sequence, adding additional spice powders and herbs.
  • Add in the chicken and cook till the gravy reduces to personal preference.

You might also like:

Ingredients:

  • 1 kg Chicken (skinless, bone-in pieces, cut into smaller sized pieces)
  • 3 Medium-sized, Red onions, chopped
  • 6 large cloves of Garlic
  • 1-inch knob of peeled ginger
  • 1 Long mild green chilli ( yields about 2 Tbsp, when sliced)
  • 2 Tomatoes, chopped
  • 1-2 tsp Kashmiri Chilli powder
  • 2 tsp Fennel powder
  • 1/4-1/2 tsp Black pepper
  • 2 tsp Cornflour (mixed with 1/4 cup water- to make a slurry)
  • Sunflower Oil as needed for shallow frying (about 1/4 cup)
  • 1/2 cup Fresh coriander leaves, chopped
  • 2 sprigs, fresh Curry leaves

To Marinate the Chicken:

  • 2 tsp Kashmiri Chilli powder
  • 1 1/2-2 tsp Black Pepper powder
  • 1 tsp Garam Masala
  • 1 tsp Coriander powder
  • 1/4 tsp Turmeric powder
  • 1 tsp Cornflour
  • 1 tsp Salt (or to taste)
