Chicken Shahi Rolls – Chicken Cheese Rolls

When it comes to food, the term ‘Shahi’ typically signifies ‘rich’. Literal translation – Royal. It was the term used for ‘Royal’ in the Imperial Court, during the Mughal Era – in reference to the Royal title of ‘Shahanshah’.

Typically the Shahi dishes, are rich containing cream or cheese or anything considered royal, luscious or extravagant. For example Shahi Paneer, Shahi Tukda, Shahi Kurma…

This Chicken Shahi Rolls recipe is my first for Ramadan 2022. It proves so easy to make but flavourful and yummy. You can serve it with green chutney, but it is delicious just on its own.

How to make Chicken Shahi Rolls – Chicken Cheese Rolls – Recipe at a glance:

  • Prepare the minced chicken filling.
  • Flatten stuff and Roll the Kebabs as shown in the recipe.
  • Roll in bread crumbs and egg wash.

How to Roll Chicken Shahi Rolls -STEP BY STEP IMAGES:

large ball- place on parchment

Fold over parchment paper and flatten

spread with hands

till large enough for cheese slice

align cheese slice on flat top edge

Fold over left side of parchement

and right side

to cover the cheese slice neatly

Roll the remaining rough edge gently towards you

to get a roll

Fold over the parchment and roll a few times gently

to get a very smooth neat roll

roll in bread crumbs

dip in egg wash

deep fry in batches

till light golden in color on medium flame

Ingredients:

  • 600 gms minced Chicken
  • 2 Tbsp finely minced Ginger
  • 2 Tbsp finely minced Garlic
  • 3-4 Tbsp Green Chillies, ground to a paste with a little water (Use mild or hot chilies according to preference)
  • 2 Tbsp finely chopped Cilantro(Coriander) leaves
  • 2 Tbsp finely chopped Mint leaves
  • 2 tsp Tandoori Spice Blend (see notes for my recipe or use your own)
  • 1 tsp North Indian Garam Masala (see notes for my recipe or use your own)
  • 1/2 tsp White Pepper powder
  • Just over 1/2 tsp Salt
  • 10 Natural Cheese Slices(Mozzarella)
  • 3/4 cup plus 1 cup Bread Crumbs, divided
  • 3 Eggs, beaten
  • 1 Tbsp Oil plus Oil for Frying (Sunflower oil)
