Chicken Manchurian (made with Ching’s Secret Sauces)

Chicken Manchurian is one of my family’s favourite side dishes for Fried Rice. Since I make it pretty often, I tend to switch it up now and then.  This version, gives you a fantastic restaurant-style taste, one which is achieved by using  Indo-Chinese Soy, green Chilli, and red chilli sauces. Although you may use various brands, I found that the Indo-Chinese brands, have the right ratio of spice to sweetness, whereas some other sauces may be too sweet, and you don’t get the same taste as Indo-Chinese restaurants, and will more likely get a more American Chinese touch to it.

Although there are several Indian brands, one of the easiest to come by, globally would be Ching’s Secret sauces. This is not a sponsored post, but I do recommend the green chilli, red chilli, and dark soy sauces, for several recipes.

How to make Chicken Manchurian (made with Ching’s Secret Sauces)- Recipe at a glance:

  • Prepare batter for chicken and deep fry in batches.
  • Prep other ingredients. Chop onion, capsicum and  green in square shape pieces.
  • Saute onion, garlic and chilli, adding sauces in stages.
  • Add water and slurry to thicken after returning the fried chicken.
  • Garnish and serve hot.

Ingredients:

  • 600 gms boneless chicken, cut into small chunks
  • 4 Tbsp crushed/ pounded garlic (for the batter)
  • 6 Tbsp plain flour
  • 6 Tbsp cornstarch (cornflour)
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 eggs
  • Oil, for deep-frying in batches(as needed)
  • 6 Tbsp finely minced garlic (for the sauce/gravy)
  • 2 Red onions, cut into square pieces
  • 4 Tbsp spring onion (the bulb portion), chopped
  • 3-4 long mild green chillies, chopped into squares (If your chillies are hot use less)
  • Half of one large Green bell pepper (capsicum),  cut into large squares
  • 1 vegetable bouillon cube (stock cube)
  • 1- 2 Tbsp dried red chilli paste (See notes)
  • 4 Tbsp Ching’s secret green chilli sauce (or similar) , divided
  • 1 Tbsp Ching’s secret dark soy sauce (or similar)
  • 2 Tbsp Ching’s secret red chilli sauce (or similar)
  • 1 tsp Vinegar
  • 1 tsp Sugar
  • 3 Tbsp cornstarch mixed in 1/2 cup water to make slurry
  • 3 Tbsp spring onion greens, chopped – for garnish
  • 3 Tbsp chopped fresh cilantro – for garnish
