Chicken Kabiraji (Kobiraji) Cutlets – Bengali Style Cutlets in a crispy Egg Net-These large sized cutlets are an uber delicious snack. The cutlets are unlike any other… The lightly packed filling is crumb fried and then coated in a crispy egg net or nest. Use your knife and fork to eat these ‘patty’ like cutlets, along with some salad and green chutney. It’s amazingly delicious… I will try to add a better picture, but honestly.. give this one a try!

What is Kabiraji (Kabiraji meaning): The word Kabiraji, pronounced Kobi Raji in Bengali comes from the local pronunciation of the word ‘Coverage’. The outer covering of ‘Egg Net’ gave them the name’ Chicken Coverage Cutlets’. (Likely some Western influence there). Over time, the name morphed into Kobiraji. There is also a lesser accepted theory, that these cutlets were the only cutlets accepted by the Poet Rabindranath Tagore, and hence was coined the name Kavi Razi – Kabi Raji (translated – ‘Poet agrees’ ). I am definitely towards the pronunciation morph theory! Whatever be the name, these ‘Egg Coverage Cutlets’ / Chicken Kabiraji Cutlets are insanely yummy.

How to make Chicken Kabiraji Cutlets – Recipe at a glance:

  • Finely chop all the cutlet ingredients by hand or use a chopper.
  • Form loose, large cutlets with your hands.
  • Dip in egg wash and then breadcrumbs.
  • Fry till golden.
  • Make the crispy egg nest and wrap the cutlet inside it as you fry it once more.
