Chicken Fried Rice – Restaurant Style

Chicken Fried Rice Restaurant Style, is one of those recipes that always hits to spot. Simple to prepare and if you follow this recipe, you can make this favourite Fried rice at home. I have earlier shared the recipe for Indo-Chinese Chicken fried rice, where, the chicken is marinated and part-fried before frying along with the rice. That is a great recipe too. However, this one is easier and still gives, the tasty Indo-Chinese  style of Chicken Fried rice.  Here, we boil the chicken before adding to the fried rice. In fact many restaurants, use this method, since it is easier to make fried rice in this manner for large orders.

I often make a simple soup, using the broth leftover from cooking the chicken. Just add some seasoning and vegetables to taste. Sometimes a little milk is added for cream of veg soup.

How to make Chicken Fried Rice – Restaurant Style- Recipe at a glance:

  • Cook Rice and cool off.
  • Cook chicken cubes and drain.
  • Chop vegetables. Steam the carrot and beans together.
  • Saute ingredients, vegetables and fry the cooked chicken along with this. 
  • Add seasoning and add the cooked rice. Fry together.
  • Scramble egg and toss through with the fried rice.

Ingredients:

  • 2 cups Basmati Rice
  • 3 cups water
  • 300- 350 gms boneless chicken, cubed
  • 1 – 1/2 tsp salt, divided
  • 1 – 1 1/4 tsp tsp black pepper powder, divided
  • 2 Tbsp light soy sauce
  • 1 medium-large carrot
  • 1/2 – 3/4 cup French beans
  • 1 cup cabbage, shredded
  • 3/4 cup green bell pepper/ capsicum, sliced into thin strips
  • 1 red onion, finely chopped
  • 2 Tbsp very finely chopped/ minced garlic
  • 1-3 Tbsp sliced green chillies – to taste
  • 3-4 Tbsp spring onion greens, chopped
  • Salt and pepper to taste
  • 4 eggs
  • 6 -8 Tbsp peanut/ sunflower oil
