Chicken fi Har Rice

Chicken fi Har Rice is a simple alternative to making biryani or Kabsa. Combine the two and you have a totally different, but very tasty rice dish. This is a part of my ‘fi har series’ of recipes.

So I have mentioned earlier that I first came to know of Fish fi har from my sister… The effect of flame on grilled fish gives it a whole new ‘yum’ factor.  I added the same concept here with chicken. However, here, we add the smoked/flamed chicken to a simple gravy and add it over a light Biryani Rice / Ghee Rice or Pulao.  I have used the same method almost, for cooking the rice as in this older post.

The gravy is something my friend Safiya shared with me, from one of her experiments. I liked the addition of carrots and capsicum here. They both add a lot of flavors.  You will be surprised how tasty the carrots are in the gravy too! The smoked chicken lends its flavor to the gravy and the end result is definitely one that pleases the senses.

This rice is great with a side of Salata Hara and Garlic Sauce.

How to make Chicken fi Har Rice – Recipe at a glance:

  • Marinate(30 mins) & Par-fry Chicken.
  • Prepare Masala and Rice simultaneously.
  • Smoke fried chicken and add to the masala.
  • Serve finished masala over rice.

Ingredients:

  1. 1 kg chicken, cut into small pieces
  2. Sunflower oil for shallow frying
  3. 5 medium-sized onions, sliced
  4. 2 Tbsp Ginger-garlic paste
  5. 4-5 Long and mild green chillies, sliced vertically through the middle
  6. 3 tsp Kabsa Spice mix
  7. 2 smaller carrots, sliced into half-inch rounds
  8. 1 Capsicum sliced into thin rounds
  9. 1 Chicken bouillon/stock cube
  10. 1 pinch Turmeric powder
  11. 1 tsp Coriander powder
  12. 1/4 cup chopped fresh coriander
  13. Fresh lemon slices, for serving.

To marinate the chicken

  1. 1 chicken bouillon/stock cube
  2. 1 Tbsp Sunflower oil
  3. 2 Tbsp Ginger-garlic paste
  4. 2 tsp Kabsa Spice mix
  5. 3/4 tsp Turmeric powder
  6. 1/2 tsp Chilli powder
  7. 1/2 tsp Black pepper powder
  8. 1/2 tsp Salt (this is enough since we are also using a chicken stock cube)

For the rice:

  • 4 cups Basmati rice
  • 5 Tbsp Sunflower oil
  • 1 large red onion, sliced
  • 6 large cloves of Garlic ground with 1/4 cup water
  • 1 chicken bouillon/stock cube
  • 5 Green Cardamom
  • 5 Cloves
  • 2 sticks of Cinnamon
  • 8 cups water (1 cup = 240 ml)
  • 2 1/2 tsp salt (3 1/2 if you are not using chicken stock)
  • 1 1/2 tsp Kabsa Spice mix
  • 1 tsp lime juice
  • 1 carrot
