Chicken Chettinad – A rich, spicy chicken preparation, with a finger-licking, semi-dry gravy.
‘Chettinad’ means the land of the Chettiars. Historically, the Chettiars were known for being smart entrepreneurs, banking and money experts. The Chettinad community is also renowned for its generous and sometimes overwhelming hospitality. The dishes of this area are the spiciest and the most aromatic in India. The cuisine is famous for the vast array of spices that go into a single dish. Freshly ground masalas are preferred for each preparation. Boiled Egg is a regular garnish to most meals, and is quite a versatile ingredient in the Chettinad Kitchen.
Traditionally, a typical Chettinad meal is served on a large banana leaf with rice, vegetables, non-veg and vegetarian side dishes as well as pickles, and papadams. The Chettiars are also quite particular about the number of dishes served! It must be an odd number like 7 or 9 dishes per meal. And each item is designated a special order in which it is served. Every occasion is a reason to feast from birth to death!

Method at a glance.
- Marinate the chicken with simple ingredients.
- Prepare the fresh ground spice mix.
- Saute fresh ingredients and blend along with preapred spice mix, to make the masala paste.
- Lightly fry the chicken in light spices. Add the prepared masala paste and cook till tender.
