Buttermilk Crispy Chicken Burger. A favorite burger recreated from McDonald’s Singapore Signature Collection.
So McDonald’s across the globe is not the same! We know for a fact that McDonald’s in the US and UK really are lacking where some countries have special and extra-special items on the Menu. I find it interesting to try Mcdonalds in different countries when we visit.
Items like the McRaclette in Switzerland which contains a beef patty, raclette cheese, cheese sauce, pickles, and onions in a crusty bread roll.
In Portugal, they have the Novo Beef Burger, which contains a beef patty, grilled onions, brie, lettuce, and honey and mustard sauce, and is served in a brioche bun.
In Australia, they have the Big Brekkie Burger, a breakfast behemoth consisting of beef patty, hash brown, egg, bacon, melted cheese, and barbecue sauce in a toasted sesame seed bun.
In Saudi Arabia, Chicken patties are encased in Arabic Pita bread with tomato, onion, lettuce and Garlic Sauce.
Other regional specials include the McCurrywurst with Chicken in Germany, Poutine fries in Canada, Le double Blue Cheese and Bacon in France, the Dosa Masala Brioche in India, Mc Polo Italiano in Chile, and the McVegan in Finland and Sweden.
Here, in Singapore, a burger that has been around in the Signature collection since 2017 is the buttermilk Crispy Chicken Burger. Not anything like the regular Buttermilk Chicken Sandwich available in the US and UK and is quite terrible really.
The Buttermilk Crispy Chicken Burger, in Singapore, has a lot of people, saying it is now their favorite burger at McDonald’s. And they finally got a special menu burger that is here to stay!
So with lockdown, and the girls missing their monthly allotted trips to McDonald’s, I decided to try out the recipe at home. I had been studying the flavor profile for a while now.
The girls were on their phones telling their friends that it was even better than the McDonald’s burger. I was humbled. So here .. Recreating A McDonald’s recipe at home. Please watch the video.

And fun to make at home. We also prepare the lip-smacking Black Pepper Mayonnaise for this scrumptious hot burger. Crisp on the Outside, Juicy on the inside, with Romaine lettuce and melt in your mouth Colby Cheese slices. Yummy in each bite!

How to make Buttermilk Crispy Chicken Burger – Recipe at a glance:
- Prep the Boneless Chicken Leg portions, removing unwanted bits and skin.
- Marinate the chicken pieces with the seasoned buttermilk. Chill for one hour.
- Prepare Black Pepper Mayonnaise.
- Chop up cabbage and lettuce and remove chicken from the fridge well before frying.
- Par – fry the chicken and then bake till done.
- Assemble and serve hot!

Ingredients:
- 8 boneless whole leg portions (usually sold with skin on)
- 8 Burger Buns (see notes for homemade burger buns)
- Romaine Lettuce (preferred) Or use Iceberg lettuce if unavailable about 2 cups
- Shredded fresh Purple Cabbage – 1 1/2 cups
- Sunflower/ Canola oil for frying – as needed
- 8 natural Newzealand Colby Cheese slices (preferred) – it melts perfectly in this burger.
To Marinate the Chicken:
- 2 cups fresh buttermilk
- 3 tsp Fresh garlic, minced
- 1/2 tsp Thyme
- 1/2 tsp Tarragon
- 1/4 tsp dried Parsley
- Tiny pinch of Sage, if available
- 2 tsp Tabasco sauce or other Hot Sauce
- 1 tsp Black pepper powder
- 1 tsp Salt
For Dredging the chicken:
- Â 2 cups Plain All-purpose flour (you might need to add more flour later)
- 1/2 tsp Black Pepper powder
- Just over 1/2 tsp Salt
For Black Pepper Mayonnaise:
- 1 cup/ 240 mls Salad Oil (pre-measured) – I use Sunflower Oil
- 1 large Pasteurized Egg
- 3/4 -1 Tbsp Distilled White Vinegar (I use 3/4 Tbsp)
- 1/2 tsp Black Pepper powder
- 1/4 tsp Salt
- Few drops of lemon juice
- 1/4 tsp Sugar
