Blueberry – Whipped Cream Layer Cake

This Blueberry – Whipped Cream Layer Cake is an easy-to-make  ‘celebratory’ cake. Using the lightest, airiest sponge cake base, with a whipped cream frosting and incorporating fresh blueberries as well as blueberry syrup/crush, it is a fantastic cake if you love adding fresh fruit flavor.

Similar to my Whipped Cream and Mixed Fresh fruit Layered Sponge Cake(recipe here), this cake can be made similarly by adding any fruits or berries, to cater to your fancy.

My youngest LOVES Blueberries.. and we have them in the fridge almost always, so I decided to surprise her for New Years 2022 with this cake! It was delightfully received and  REALLY SOFT AND YUMMY CAKE. I love to bake, but I hate decorating.. and this easy ‘anyone can attempt’ Whipped cream piping is always easy for me.

This recipe makes a 2 kg four-layer (9 inch round) cake. You can halve the recipe and use 5″ cake pans to make a smaller cake.

How to make Blueberry – Whipped Cream Layer Cake Recipe at a glance:

  • Prepare the Sponge Cake and cool.
  • Prepare the whipped cream.
  • Slice the sponge cake into four layers.
  • Use whipped cream (plain and mixed with blueberries), to fill and top the cake as desired.
  • Chill till cream sets.

Ingredients:

For the Blueberry and Whipped Cream Filling/Deco:

  • 1 liter chilled Heavy Whipping Cream (35%-40% Butterfat content)
  • 1 1/2 Tbsp unflavoured gelatin
  • 1/2-3/4 cup Icing sugar (Confectioners Sugar) You can add a bit more if you like the cream sweeter.
  • 1- 1/2 cups fresh blueberries
  • 3/4-1 cup blueberry crush or blueberry syrup of choice
