Best, Lightest Sponge Cake Recipe – Best For Layered Soft Cakes
This is by far the Best, Lightest Sponge Cake recipe ever!!! I have made the cake countless times now and the results have always been amazing. It is so light a perfect for cakes the use whipped cream fillings with nuts or fruits. The recipe is for a 9 INCH ROUND – four-layered cake, which would yield a large 2 kg Cake, once filled and topped. You may also halve this recipe for a smaller cake, using 5-inch pans. I swear by this recipe which is the same sponge as used in my older and popular Sponge cake with whipped cream and fruit filling recipe here.
I also love this recipe, because you can just use cup and Tbsp measures without weighing everything and it turns out fine! My cup is standard US size where 1 cup=240 MLS. I use average size eggs.

How to make the Best, Lightest Sponge Cake Recipe – Best For Layered Soft Cakes – Recipe at a glance:
- Separate the eggs.
- Bring all ingredients to room temperature.
- Sift flour with salt.
- Beat Yolks with sugar.
- Beat whites till stiff.
- Mix in the batter in stages, adding the whipped whites, last.
- Pour into 2 baking pans.
- Bake – Cool – Slice into layers – before using to make a layered cake like the Sponge cake with Fresh fruit can whipped cream, seen below.

- 10 eggs, to be separated into 8 yolks and 10 whites, for this recipe
- 3/4 tsp Cream of Tartar
- 1 cup Caster Sugar (Fine -grain)
- 1 cup plus 2 Tbsp Cake flour

- 1/2 cup Vegetable or Sunflower oil
- 2 Tbsp store-bought Orange Juice(no pulp)
- 3/4-1 Tbsp water
- 1 1/2 tsp Vanilla extract
