Smoky and exotic with a special combination of spices and ingredients that provides that ‘melt in mouth’ sensation. There are many variations of Satay really.  This is one of my favorites. Ingredients:
- 600Â gm boneless chicken fillet cut into thin long strips (You may use chicken breast cut into (1 1/2 x 10 x 1cm) Â strips also.
- 1 stalk Lemongrass, to be used for basting
- Oil for basting and grilling, as required (Sunflower oil etc..)
For the Chicken Marinade:
- 8 Shallots, peeled
- 4 large cloves of Garlic, peeled
- 1 1/2 tsp juicy fresh, young ginger, peeled
- 1 1/2 tsp Galangal, peeled and pounded
- 1 tsp fresh Turmeric root(3/4 tsp turmeric powder may be used as a substitute)
- 1 tsp Cumin seeds
- 1 tsp Fennel seeds
- 2 tsp Coriander powder
- 1 1/4 Tbsp Palm sugar (Gula Melaka) (Do not use more, unless you like the skewers very sweet, maybe substituted with brown sugar)
- 1/2 cup Sunflower/ Peanut oil
- 1 rounded Tbsp Tamarind pulp (soaked in 1/4 cup hot for 10 minutes)
- Salt, to taste
For Serving:
- Onions, cut into square slices
- Sliced Cucumber
- Satay Peanut Sauce
