Baked Beef Ribs with Coconut Cream Sauce
The key to getting ultra-tender and juicy beef ribs in the oven is to marinate in the BBQ-style wet marinade overnight or 8 hours and then bake them very slowly in the oven. This ensures you will get the most tender, fall-of-the-bone, and succulent beef ribs.
A creamy coconut sauce is simmered down with the juices from the oven-baked ribs. This luscious cream sauce is used to coat the melt-in-your-mouth beef. The coconut cream elevates these Midwestern-style BBQ ribs, to a whole new level of flavour. The sauce is also yummy over mashed potatoes, which are served on the side.
If you can’t find bone-in short ribs, boneless will also work (just be sure to reduce the cooking time accordingly).

How to make baked Beef Ribs with Coconut Cream Sauce – Recipe at a glance:
- Cut and trim Beef Ribs, or get it prepped from the butcher.
- Rub in butter and then add ‘Marinade Ingredients’ and herbs.
- Marinate 8 hours or overnight.
- Return to room temperature and bake in preheated oven for 4 hours.
- Prepare Coconut Cream sauce and pour over the rested ribs.
- Put back in the oven briefly under the broiler.
- Serve with vegetables and mashed potato, with some extra sauce.

Ingredients:
- 1 kg Beef short ribs, cut ‘English Style’ into small sections
- 60 gms unsalted butter, at room temperature
- 1/2 cup Garlic cloves, sliced finely
- 6 small sprigs of Fresh Thyme
- 2-3 Sprigs of fresh Flat leaf Parsley
The Marinade Ingredients:
- 1/4 cup Olive oil
- 2 tsp Mild chilli powder
- 2 tsp Paprika
- 2 tsp whole Black peppercorns
- 3/4-1 tsp Sea salt flakes
- 2 tsp Mollases (or dark brown) sugar
- 2 tsp Tomato paste
- 2 tsp Worcestershire sauce
- 2 tsp Red chilli Sauce
- 1 tsp dry Mustard powder
- Zest from one unwaxed fresh Lemon (about 1 Tbsp)
For The Coconut Sauce:
- One small Vidalia /Yellow Onion (about 1/2 cup), chopped
- 1-2 cloves of Garlic, chopped finely
- 150-200 ml Kara Coconut Cream
- 1 Tbsp fresh Lemon juice
- 1 sprig fresh Parsley
- 1-2 tsp Olive oil
- Salt and Black Pepper
