Ramadan Kareem everyone! This Bakery Style Fried Bun Chicken Sandwich is my first ‘new’ recipe for Ramadan 2021. Another Covid Ramadan. Not the same as pre-covid, but we should learn to count our blessings always.

So this is a 3-in-1, recipe for a homemade Fried Crispy Coated Bun, with tasty shredded chicken filling and a chili-garlic mayo.

Together, it proved to be a tasty treat, with great texture and flavour. This recipe went down well with everyone I have made it for, so I hope you will enjoy it with your friends too.  Thanks to You for making those yummy noises as you eat 😉

How to make Bakery Style Fried Bun Chicken Sandwich – Recipe at a glance:

  • Prepare the dough for buns and leave to rise.
  • Marinate bitesize chicken pieces.
  • Prepare the sauce and refrigerate.
  • Grate and chop the vegetables for filling.
  • Pan-fry the chicken and leave to cool off before shredding.
  • Divide dough, flatten, and dip in crumb coating.
  • Deep fry buns in a shallow pan on low heat till all are done.
  • Toss together, grated, cooked chicken, vegetables with some for filling.
  • Assemble the sandwiches with filling, additional sauce, and toppings.

Ingredients:

For the chicken and veg filling

  • 600 gms boneless chicken breast, cut into bite-size chunks
  • 3 tsp Kashmiri Red chilli powder
  • 1/4 tsp Black pepper powder
  • 3/4 tsp Salt
  • 3 tsp fresh lime/lemon juice
  • 1 1/2 cups grated cabbage
  • 1 carrot, grated
  • 1 tomato, chopped finely
  • half of a green Capsicum grated
  • 1 red onion, diced (optional- for extra crunch)
  • 3 Tbsp chopped fresh coriander leaves
  • For garnish, tomato ketchup and chopped fresh coriander leaves (optional)

For the fried bun:

  • 3 cups plain wheat flour
  • 1 1/4 cups of warm milk
  • 1 1/4 tsp active dried yeast
  • 1 1/4 tsp sugar
  • 1/2 tsp salt
  • 1 Tbsp Olive oil plus extra for drizzle and for pan-frying the chicken
  • 2 eggs, beaten with salt and pepper
  • 1 1/2 cups Breadcrumbs.
  • Sunflower oil for shallow frying

For Chilli Garlic Sauce:

  • 1 cup sunflower oil
  • 2 large cloves Garlic
  • 1 tsp Kashmiri Chilli powder
  • 1 Egg white(room temperature)
  • 1 Tbsp Vinegar
  • 1/4 tsp Salt
