Baked Beef Ribs for Turkish Kapama

I was recently introduced to some trending Turkish fare by one of my viewers, John. I got the help of one of my Turkish friends from high school, to help me with some authentic recipes. I have posted the Turkish Chicken and Rice Dish Tavuk Kapama, and here a baked Beef Ribs recipe. The beef is slowly baked till falling off the bone, tender.

Such simple marination with some fresh herbs! You can use this to make Beef Kapama Rice, by substituting the chicken in the Tavuk Kapama recipe with beef. I prefer to serve the beef on the side. It was an instant hit. You must use beef ribs for this recipe. In Turkey, Lamb (sheep) is used. Since we don’t eat lamb, I  first thought of using Indian Mutton (goat) but was advised to try Beef Ribs instead. Very happy to have made that choice.

The beef ribs need to be marinated for 5 hours (I left them overnight), and baked for 3.5 hours. So plan accordingly.

How to make Baked Beef Ribs for Turkish Kapama- Recipe at a glance:

  • Prepare marination ingredients, and trim beef ribs.
  • Rub ingredients and leave for 5 hours at least.
  • Wrap with foil paper and bake on low temps for 3.5 hours.

Ingredients:

  • 1 kg beef ribs (you can buy them uncut, or use chopped pieces)
  • 70 gms unsalted butter, at room temperature
  • 1/4 cup Olive oil or Evoo
  • 2 generous tsp Chilli powder (Kashmiri)
  • 2 generous tsp sweet Paprika (Turkish Sweet Red Pepper powder if possible)
  • 2 tsp whole black peppercorns
  • 1/2 cup of small Garlic cloves (if using larger cloves they may be sliced in half)
  • 1 1/4 tsp Himalayan salt crystals
  • 6 small sprigs of fresh thyme
  • 4 small sprigs of fresh rosemary
