Dhaba Style Chicken Karahi
Description
Dhaba-style chicken curry is a popular dish from India, known for its rich flavors and aromatic spices. It's a hearty and satisfying dish that's perfect for quick weeknight meal.
A dhaba is a type of roadside eatery commonly found in the Indian subcontinent, especially along highways, and truck stops. They are known for their simple, no-frills atmosphere and their focus on serving hearty, flavorful local cuisine.
Ingredients

Heat oil in a wok or kadai.

Add cumin seeds and bay leaves. Allow the seeds to pop.

Next, add the onion and saute briefly.

To this, add the garam masala first and saute till nice and aromatic and the onions are slightly softened.

Add the cleaned, thoroughly drained chicken pieces and toss to coat with the onion-spice mixture. Cook for about 4 minutes, till the chicken, is evenly coloured.

Add the ginger-garlic paste and remaining spice powders. Also, add salt to taste. Stir through to coat the pieces and cook for 1 minute.

Add tomatoes and stir through. Add some of the ginger juliennes, chopped coriander and green chilli. (Reserve the remainder for garnish).

Stir through. Cook, covered on medium heat for 10 minutes.

Open, and turn up the heat to reduce the gravy to desired thickness.

Garnish with remaining ginger juliennes, green chilli and coriander.

Serve hot with roti/chapati, homemade butter and onion rings.
